I know that breakfast is the most important meal, but I am not a big fan of breakfast. I usually like fruits & veggies smoothies for breakfast, or just fruits or.... how about popsicles?!! I think I just found the magic recipes to combine business and pleasure: breakfast popsicles! I kick off my new series called "My dream is to have breakfast with ice cream!" - now, that's a title!
Let's start with the exotic popsicles.

INGREDIENTS:
1/2 mango
2 pineapple slices
2 medium-size nectarines
2 medjool dates, pitted
1 tablespoon lemon juice
Water, if needed

DIRECTIONS:
1- Peel and cut the mango, pineapple, and nectarines into medium size cubes.
2- In a blender, place all the fruits and add in the pitted medjool dates and lemon juice. Blend until smooth. If the mixture is too thick add a little bit of water if needed for the blender to run.
3- In a popsicle mold, pour the mixture. Insert a stick in each popsicle and put the mold in the freezer for at least 8 hours.
4- To easily unmold the frozen poposicles, dip the tip of the molds in a large glass of warm water.
