Then let's continue the Indian Series with a traditional Indian dessert called "Gajar Halwa", which means "Carrot Sweet", that SLURP STUDIO showed me how to make it in Bangalore, India. This is a delicious mix of cooking carrots flavored with cardamom and mixed with cashews and raisins! Try it and let me know what you think!

INGREDIENTS:
300 grams of carrot
75 grams of butter
25 grams cashew nuts
20 grams of raisins
3 cardamom pods (or 1/2 teaspoon ground cardamom)
1 teaspoon caster sugar (to be adjusted according to your taste)
500 ml milk
50 ml sweetened condensed milk

DIRECTIONS:
1- Peel and grate the carrots.
2- Place a frying pan over medium heat and melt the butter. Cook for few minutes and the butter is golden brown.
3- Put the cashews and raisins into the melted butter. Fry for a 30 seconds until the cashew nuts become golden.
4- Add the grated carrots.
5- Cook the carrots, cashews and raisins for about 8 minutes until the carrots are soft. Stir constantly to prevent carrots from burning.
6- Pour the milk into the frying pan and stir until it is completely absorbed.
7- Crush the cardamom pods and add them to the carrots (or, alternatively, the ground cardamom). Cook for a few minutes until the milk is reduced.
8- Add the sweetened condensed milk and mix until it is completely incorporated.
9- Taste, and add the sugar if necessary. Stir to melt.
10- Cook for few minutes until the preparation is reduced.
Serve warm or cold, decorated with a few cashews or better, a ball of vanilla ice cream!
