INGREDIENTS:
100 grams (3/4 cup) whole wheat flour
100 grams (1 cup and 1 tablespoon) oat flour
1 tablespoon sesame seeds
1 tablespoon flaxseed
1 tablespoon olive oil
1 teaspoon dry yeast
A pinch of salt
Lukewarm water
100 grams (3/4 cup) whole wheat flour to roll the dough
DIRECTIONS:
1- In a bowl, combine all dry ingredients: the whole wheat flour, oat flour, sesame seeds, flaxseeds, and the dry yeast then the olive oil. Mix.
2- Gradually add the water while mixing until your dough is homogeneous and not sticking to your hands anymore.
3- Knead the dough for around 10 minutes. While kneading, soak your hands in water and sprinkle your working surface with a little bit of whole wheat flour from time to time to stop the dough from sticking to your hands and to the working surface.
4- Dust your work surface with some whole wheat flour then roll to a 8.6 inch disk (22 centimeter). Flip and dust your dough frequently while rolling to prevent it from sticking to the surface.
5- Using a round cookie cutter of 2.5 inch (6.5 centimeters) in diameter, cut small disks that will form your bread.
6- Heat a non-stick pan over medium-high heat, place your bread disks and cook for 3 to 4 minutes or until you get a golden brown color on each side.
