Best flourless chocolate cookies ever!

INGREDIENTS:
1 cup chopped dark chocolate (or chocolate chips)
187 grams (1 1/2 cups) powdered sugar (measured then sifted)
40 grams (1/3 cup) cocoa powder (measured then sifted)
1 tsp corn starch
pinch salt
2 large egg whites
1/2 tsp vanilla extract
1/4 tsp white vinegar
RECIPES:
1- First chop the chocolate. I am using real dark chocolate, 60-70% cocoa, and it makes a difference in the cookies. You can also just use your favorite chocolate chips instead.
2- In a large bowl, sift powdered sugar and cocoa. Add a pinch of salt, corn starch, and mix.
3- Time for the egg whites! Mix in the first egg white, and once it’s well integrated add the second one.
4- Now blend in the vanilla paste and the white vinegar.
5- For the finale, add the chopped chocolate… hmmmmm
6- Place the chocolate batter in the fridge for 30 minutes before using it.
7- Next spoon the chocolate batter in a baking pan covered with parchment paper and make sure to keep space between each cookie as they spread.
8- Bake in a pre-heated oven to 360 F / 180 C for around 15 minutes until the center of the cookies seem solid and there are some cracks around the edges.
9- Let the cookies cool down completely before removing them from the parchment paper.
