It's summer time. It's tapas time! Check out this special Summer Tapas Series with my friend Chef Sandra Cordero from The Cordero Negro (www.facebook.com/chefsandracordero). Fifth Tapas in our series of 5 Tapas is a delicious and refreshing green bean salad!
INGREDIENTS:
1/2 pound (225 grams) green haricot vert (or mixed colors if available)
4 oz (113 grams) green peas
4 oz (113 grams) Fava beans (shelled) or Soybeans
1 bunch purselane
1 shallot (finely diced)
4 mint sprigs
1/4 cup extra virgin olive oil
1 tablespoon Jerez vinegar or white vinegar
1/2 lemon
Salt and pepper to taste
