INGREDIENTS:
1½ cups chopped fresh pineapple (keep the shell for serving)
1 large red bell pepper
1/2 onions, chopped
1 Carrot
1 tomato
½ cup chopped raw, unsalted cashews
Fresh cilantro
1 small lime
1 tablespoon soy sauce
2 tablespoons vegetable oil
2 garlic cloves
Pepper to taste
1 cup of cooked rice
Shrimps
2 eggs
DIRECTIONS:
Step 1: Prepare the Ingredients
1- First, peel the onions, cut in half and finely chop it.
2- Cut the tomato into 4 quarters, remove the seeds, then slice and cut the tomato into cubes.
3- Peel the carrot, cut in half, remove the core then cut the carrot into small cubes.
4- Cut the top of the red bell pepper, remove the seeds, then chop it into small cubes.
5- Cut the pineapple in half. Empty the pulp and keep the shells for serving. Then Cut the pulp into small pieces.
6- Finely chop the cilantro.
7- Finely chop the garlic cloves.
8- Chop the cashews.
Step 2: Making the pineapple fried rice
1- On medium heat, in a deep saucepan, drizzle the vegetable oil.
2- Add the shrimp and cook for a few minutes until their color changes from translucent to pink. Once done, transfer the shrimp to the empty bowl and keep them for later.
3- In the same pan, add the eggs and scramble them with a wooden spoon. Cook the eggs for one minute until they lightly set.
4- Add the cooked rice to the pan and stir to combine with the eggs. Cook, stirring occasionally, until the rice is hot, about 3 minutes. Then transfer the rice to an empty bowl.
5- Add one tablespoon of oil to the pan and add the onion and garlic and stir. Then add the tomatoes and cook for another minute while stirring. Transfer the contents of the pan to your bowl of shrimps.
6- Add the carrot cubes. Cook for 2 minutes then add the red bell pepper and pineapple cubes. Cook, stirring constantly, for a few minutes until the vegetables are half cooked.
7- Pour the contents of the bowl with shrimp back into the pan and stir to combine.
8- Add the soy sauce, pepper, cashew, Mix.
9- Add the cooked rice with eggs and combine all the ingredients.
10- Add the chopped cilantro. Mix and cook for one minute.
11- Serve the fried rice immediately in the pineapple halves.
12- Squeeze some lime for extra flavor!
