Let's start the "Moroccan Street Food" series with this amazing Beignets. So soft, fluffy and yummmyyyy!!!

INGREDIENTS:
2 teaspoons (7 grams) dry yeast
50 grams (1/4 cup) white granulated sugar
180 millilitres (3/4 cup) lukewarm water
1/2 teaspoon salt
1 large egg
50 milliliters (1/4 cup) lukewarm milk
440 + 180 grams (3 1/2 cups + 1 1/2 cup) all purpose flour
3 tablespoons butter, softened
Vegetable oil for frying
White granulated sugar for decoration
Jam of choice
Powdered sugar
DIRECTIONS:
Step 1: Prepare the dough
1- In a large bowl, combine the dry yeast, sugar, and lukewarm water.
2- Using a whisk, mix until the yeast is dissolved and let rest for 5 minutes to activate the yeast. You will notice the mixture becoming thicker and will have bubbles on the surface.
3- Add salt and one egg, mix until well combined and add the milk. Mix again.
4- In a large bowl, place 440 grams (3 1/2 cups) of flour, make a well in the center and add the wet mixture. Gently mix all the ingredients by hand until you get a sticky dough.
5- Add the butter and continue mixing until complitely incorporated.
6- Add the remaining flour little by little while kneading the dough until you get a soft dough.
7- Transfer the dough on a flat surface and keep kneading it with the palm of your hands until you get a soft non-sticky malleable dough.
8- Sprinkle some flour in a large bowl and place the dough in it. Cover with a plastic wrap and let the dough rest in a warm place for about 1 hour until it doubles in size.
9- Remove the plastic wrap and using your fist, push the dough down to remove all the air bubbles.
Step 2: Shape the beignets
10- On your workstation, sprinkle some flour, transfer the dough onto it and sprinkle some flour on top.
11- Roll out the dough to about ½ cm (¼ inch) thickness. Using a medium cookie cutter, cut out circles in the dough, then using a small cookie cutter, cut out holes in the center of the large circles.
12- Place the beignets in a baking pan covered with parchment paper and the small round circles of dough in a separate baking pan.
13- Keep rolling and cutting the rest of the dough until you are done.
14- Cover the beignets with a clean towel and let them rest in a warm place for about 30 minutes until they gain some volume.
Step 3 : Deep fry the beignets
15- In a frying pan over medium-low heat, heat some vegetable oil.
16- Add the beignets and fry them on both sides. Keep turning the beignets around so they get an even golden brown color.
17- Place the beignets on a paper towel to absorb excess oil then dip them immediately in granulated white sugar and cover them from all sides.
18- Serve immediately.
Step 4: Prepare the round donuts
19- In your still warm oil, fry the round donuts on both sides until they are golden brown.
20- Place round donuts on a paper towel to absorb excess oil.
21- Cut the donuts in the middle and fill them with jam, my favorite is the strawberry jam. Sprinkle with icing sugar on top and serve immediately.
